  • DELICIOUS GINGERED RED CARROT & ORANGE  SOUP RECIPE

    Soups are the new juices, they are nutritious, filling, warming and packed with flavour; we’ve selected a favourite Vitamix recipe for you to try at home.

    Ingredients
    • 220g carrots, chopped into chunks
    • 1 medium onion, peeled, sliced
    • 1/2-inch-(1.2cm) cube of fresh ginger root
    • 2 tablespoons of butter (30 g)
    • 240ml of hot water
    • 1 vegetable stock cube
    • 1 orange, peeled, halved
    • Salt and pepper, to taste
    Directions
    • 1. Sauté carrots, onions and ginger in butter until soft (5minutes).
    • 2. Pour hot water (240ml) into the Vitamix container.
    • 3. Place sautéed vegetables, orange and stock cube into the Vitamix container and secure lid.
    • 4. Select variable 1.
    • 5. Turn machine on and slowly increase speed to variable 10.
    • 6. Blend for 2 ½ minutes until smooth.
    • 7. Season to taste with salt and pepper.
    • 8. Garnish with light sour cream & chopped coriander.

    Serve hot or cold.
