The sun is starting to make an appearance, the temperatures are slowly rising and people are finally ready to spend the weekend in their gardens, the parks or even on the beach. But the season’s adventures can leave you parched, though, so be sure you’re armed with one of these thirst-quenching summer cocktail recipes.
Whether they start with gin or rum or vodka or tequila or something else, the best summer drinks can really take a hot, sweaty day and turn it into a refreshing time spent outdoors. Some of the cocktail recipes ahead bring in summer's best seasonal produce whilst others look to the liquor cabinet for their bittersweet thirst-quenching, appetite-whetting flavours.
From a refreshing jug of sangria to a summertime classic with a non-alcoholic twist, it’s time to break out the shaker because it's time to mix up some delicious summer cocktails!
SANGRIA
The perfect recipe for hosting friends and family, sangria can be made in batches before your guests arrive.
RECIPE
Ingredients:
- 2 oranges, chopped
- 2 pears, chopped
- 2 lemons, 1 chopped, 1 juiced
- 100g strawberries, chopped
- 100g cherries, chopped
- 3 tbsp caster sugar
- 1 tsp cinnamon
- Ice
- 750ml bottle light red wine
- 100ml Spanish brandy
- 300ml sparkling water
Method:
- Place the chopped fruit in a bowl and sprinkle over the sugar and cinnamon, then stir to coat. Cover and leave to macerate in the fridge for at least one hour, or ideally overnight.
- Fill a large jug with ice. Stir the fruit mixture to ensure the sugar is dissolved, then tip into the jug with the wine and brandy. Stir, then top up with the sparkling water and serve.
WHAT YOU’LL NEED:
OLD FASHIONED
While whiskey is most associated with wintertime, it becomes a summertime classic when mixed with sugar, Angostura bitters, and an orange peel.
RECIPE
Ingredients:
- 2 dashes Angostura bitters
- Ice cubes
- 60ml Jameson Black Barrel
- 1 spiral orange
- 2 dashes orange bitters
Method:
- Fill a glass with ice
- Add 60ml Jameson Black Barrel
- Add 2 dashes Angostura bitters
- Add 2 dashes orange bitters
- Stir until ice cold
- Garnish with an orange spiral.

CLEAN-A-COLADA
The epitome of sunshine and white sandy beaches, the piña colada is the ultimate summer cocktail. This non-alcoholic take on the tipple is so refreshing, you won't even miss the alcohol.
RECIPE
Ingredients:
- 50ml Clean R
- 50ml pineapple juice
- 50ml pressed coconut
- Ice
- Pineapple leaves, to garnish
Method:
- Blend the ice and place in tall glass.
- In a cocktail shaker, mix together the 50ml Clean R, pineapple juice and pressed cocktail. Shake well.
- Pour the colada mix over the crushed ice, garnish with pineapple leaves and enjoy!
WHAT YOU’LL NEED:
BLUSHING MIMOSA
A brunchtime favourite, this tropical take on the Mimosa uses fresh pineapple, and champagne to deliver a refreshing summertime sip.
RECIPE
Ingredients:
- 60ml orange juice
- 30ml pineapple juice
- 2 tbs grenadine
- Champagne
Method:
- In a jug, stir together the orange juice and pineapple juice.
- Fill a champagne flute ⅔ full with the juice mixture.
- Top with champagne, then add grenadine.
