Hollow Leg is a collaboration between Galician winemaker Pablo Martinez, Dublin restaurateur Jamie O’Toole, and WineLab, each with a shared vision to create a range of quality wines with “everything but alcohol”, for those who truly treasure good wine, vibrant socialising and the following morning in equal measure. The Hollow Leg Sparkling Albariño is bright and pure on the nose, with elegant aromas of citrus peel and pear. The palate is lively and crisp with a rich mousse and beautifully balanced acidity that creates a long and flavoursome finish.
