Pierre Marcolini has fond childhood memories of the smooth marshmallow, the sweetness of the chocolate and crunchy speculaas. He felt it was time to update this irresistible combination by making it lighter still. This has inspired him to create a flavoured marshmallow half-sphere on a crunchy praline cookie, covered in delicious homemade chocolate.
