Banana Bread The KitchenAid Way

Banana Bread Ingredients

Ingredients

  • 240g gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 120g butter, softened
  • 100g sugar
  • 2 eggs
  • 360g mashed ripe bananas (about 4-5 medium bananas)
  • 5 tablespoons Greek-style yoghurt.
  • 1/4 teaspoon vanilla extract
  • 220g chocolate chips

Banana Bread Method

Method

  1. Preheat oven to 350°F. Coat 8 miniature loaf pans with nonstick pan spray.
  2. Combine flour, baking soda, baking powder and salt in large bowl; set aside.
  3. Add butter and sugar to bowl of KitchenAid® Artisan Mini Stand Mixer. Attach bowl and Flat Beater to mixer. Beat until light and fluffy. Stop and scrape bowl. Add eggs, bananas, yogurt and vanilla and mix until well combined. Stop and scrape bowl.
  4. Add flour mixture and chocolate chips and stir until well combined. Spoon batter evenly into pans, filling about three quarters of the way.
  5. Bake 35 to 45 minutes or until toothpick inserted into the centre comes out clean. Cool in pans on wire rack 15 minutes before serving.

Substitute 1 cup roughly chopped walnuts for the chocolate chips for a crunchier texture.
